Móng giò mua về rửa sạch, đun sôi nước, thả móng giò vào chần qua vớt ra xả sạch bẩn. Đun sôi nồi nước khác cho thêm 1 thìa canh muối và miếng gừng đập dập rồi cho móng giò vào luộc chín. Đun nhỏ lửa khoảng 30 phút, lấy đũa xiên thử thấy mềm là được.
Móng giò chín, vớt ra thả vào chén nước đá rồi vớt ra để nguội và thật ráo nước. Cho vào tủ lạnh khoảng 15 phút cho móng giò săn và giòn hơn.
Sả cắt khúc, chẻ nhỏ hoặc thái lát. Gừng thái chỉ. Ớt cắt miếng nhỏ. Tỏi bóc vỏ thái miếng mỏng. Cách pha nước ngâm móng giò: 1 chén nước mắm ngon, 3 chén nước, 1 chén giấm hòa trong nồi rồi đun sôi để nguội. Cho thêm đường, sả, ớt, gừng (cho đậm đà hơn một chút khi ngấm vào móng giò là vừa, không nên nhạt quá).
Xếp móng giò vào chén to hay hũ thuỷ tinh, rồi đổ hỗn hợp nước mắm chua ngọt ngâm lên, đến khi ngập nước trên móng giò là được.
Móng giò ngâm chua ngọt để ngăn mát tủ lạnh 1-2 hôm là ăn được. Món này chấm tương ớt hoặc gia vị bột canh, đường, chanh ớt cũng rất hấp dẫn.
