Cắt nhỏ các loại nguyên liệu rồi cho vào nồi, thêm vào 750ml nước tương, 1.2 lít nước, 1 chén rượu mơ, 250ml rượu sake và những phụ liệu còn lại (trừ tôm, chanh và ớt tươi). Đun sôi khoảng 15 phút. Sau đó lược qua rây thu lấy nước ngâm.
Tôm rửa sạch, cắt bỏ bớt râu và chân tôm, thấm khô nước rồi xếp tôm vào tô lớn, thêm lên trên ớt thái lát và những lát chanh, rót hỗn hợp nước ngâm đã nguội vào tôm cho ngập. Đặt vào ngăn mát tủ lạnh khoảng 3 ngày là có thể dùng.
